Cappuccino cake with marshmallow frosting

This dessert is pure indulgence. A moist, chocolatey cake with drizzles of coffee syrup and gooey marshmallow frosting that is a delicious treat alongside a cup of coffee.

Serves 12

Preparation time- 15 mins

Marshmallow Fluff for the frosting

Baking time- 30 minutes


For the cake-

  • 250g softened butter
  • 250g soft brown sugar
  • 250g self-raising flour
  • 50g cocoa
  • 4 eggs
  • 100g natural yoghurt
  • 100ml coffee, cooled
  • 1tsp vanilla extract

For the coffee syrup-

  • 100ml coffee, cooled
  • 50g soft brown sugar

For the frosting-

  • 100g softened butter
  • 200g icing sugar
  • 1 tub Marshmallow Fluff


  1. Start by preheating your oven to 180c and grease and line two sandwich tins with grease proof paper.
  2. Combine the butter and sugar together in a bowl until it is pale and fluffy, then add the flour, cocoa, eggs, yoghurt, cooled coffee and vanilla extract. Mix until it is fully combined and forms a batter like texture.
  3. Divide the mixture equally into your tins and place them in the oven on the middle shelf. Bake for 25 to 30 minutes until springy to the touch.
  4. Whilst the mixture is baking, make the coffee syrup. Place the coffee and sugar in a pan on the hob and gently bring to the boil until the sugar dissolves.
  5. Once the cakes are done, remove them from their tins and place onto a cooling rack. Pour over the syrup once they have cooled.
  6. For the frosting, cream together the butter and icing sugar until it is light and fluffy then gradually add your Marshmallow Fluff a spoonful at a time, until the frosting takes on a gooey consistency.
  7. Once the cake is fully cooled and has absorbed the coffee syrup place one half of your cake on a cake stand and spoon half of the mixture on the top, smoothing around with a spatula until covered.
  8. Then place the other half of the cake on top and spoon the rest of the frosting on the top, smoothing it out to the edges of the cake.
  9. Finally for a finishing touch, sprinkle some cocoa powder on the top and decorate with coffee beans if you wish.
